Fillet of Beef Marinated in Asian Beer


4pcs fillet steak, each 250g

½ bottle Asian beer, 160ml

½tsp salt

½dsp cracked black peppercorns

For the sauce

6dsp soy sauce

1dsp black soy sauce

30g ginger, finely chopped

3dsp sugar

3dsp water

30g fresh green peppercorns

Serve with

16 baby carrots, par-boiled

Cooking method

Marinate the steaks with salt, black peppercorns and Asian beer for a minimum of 3 hours.

To make the sauce:

  1. Put the soy sauce, black soy sauce, ginger, sugar and water in a saucepan, bring to the boil and reduce it until the sauce is thick. Keep to one side.
  2. Heat the char-grill until hot, brush the steaks with a little oil, then cook the steak to taste, approximately 1 minute each side for rare, 2 minutes each side for medium, 5 minutes each side for well done.
  3. Cut the steaks into 8 pieces.
  4. Reheat the sauce gently, add the fresh green peppercorns.
